Five entries sit in the pet_definitions table. One is the egg, one is the chick, and three are adult hens: Catalana, Silkie and Polish. Each carries a pedestal display model, which is the model the game renders when the pet stands on its base.

Inspect in CS2The four birds are rendered from the game's own models, and the egg and feed bag are the game's inventory icons. Each chicken is unique to the account that raises it: the game stores a pet seed per bird and derives its colour variant from that seed, so yours may not look exactly like the one pictured.
Chickens come in dozens of colour variants, and a pet's seed decides which one it grows into. These are all the variants the game ships, rendered from its own models and textures. The breed and variant names below are the game's own.
The extracted game files list these coats but give no chance for each one. The counts above show designs found, not their odds.
Inspect links open the exact model material group shown. Seven additional textures in the game files are not assigned to a material group, so those images have no in-game inspect link.
Ten accessories appear in CS2's Photo Booth files. Each model is shown on its own and on an adult Catalana chicken. Their use during matches has not been confirmed.
A pet moves through four stages, named in the game's own locale files. Each stage changes the model and unlocks more of what the pet can do.
The starting stage. Nothing happens until the egg hatches, and the files track a date for when it will.
The first live stage. Chicks are too young to deploy with you, so map locations and poses stay locked.
A young hen whose colours are coming in. The game's text says it is cleared to deploy with you, but how that works in live matches has not been confirmed.
A fully grown bird and the final stage. The photo booth poses that need maturity unlock here.

Chicken Eggs can appear in your Weekly Care Package. They are not guaranteed in every weekly drop.

A pet is not permanent. It eats, it gets hungry, and it eventually retires. The game runs all of that off a food expiration date that every pet carries.

Yes, the system is live in the game. Valve has not published a detailed guide, so this page combines current game files with observed live features such as the Weekly Care Package egg drop.
